The Khilari cow, named after the Marathi word for 'tiger-like agility', is a drought-resistant, fast-footed breed that thrives on the rugged terrains of Maharashtra and North Karnataka.

The milk of the Khilari cow is exceptionally dense in A2 protein and has a naturally sweet, earthy taste that translates into a lighter, delicately flavoured ghee. Our Khilari Ghee has a pale golden colour, a smooth, velvety texture, and a subtle, grassy fragrance. It's the gentlest of our three ghees — perfect for those who prefer a milder, refined taste without compromising on nutrition.

How It's Made

Free-Range Grazing – Khilari cows roam and graze on wild pastures, drinking from natural water sources.

Slow Fermentation – The raw A2 milk is boiled and allowed to ferment naturally, developing deep probiotic cultures.

Bilona Churning – Traditional hand-churning extracts pure white makkhan, rich in all water-soluble nutrients.

Patient Heating – The makkhan is slowly simmered, never rushed, preserving its delicate flavour profile and nutritional integrity.
