How It's Made

Our Malnad Gidda Ghee follows the time-honoured Vedic Bilona method:

Ethical Sourcing – Milk is hand-milked from free-grazing Malnad Gidda cows raised by small tribal farming families.

Curd Fermentation – Whole A2 milk is boiled and naturally fermented overnight in clay pots.

Hand-Churning (Bilona) – The curd is churned bidirectionally using a wooden churner (bilona) to extract makkhan (white butter).

Slow-Simmering – The makkhan is gently heated over a low wood fire, allowing the water to evaporate and the milk solids to caramelise, giving the ghee its signature grainy texture and nutty aroma.
